Malai Pasanday – A Creamy, Flavorful Delight!

Malai Pasanday is a rich and indulgent dish that brings together tender, thinly sliced beef with a luscious, creamy marinade. A specialty in Pakistani and North Indian cuisine, this dish is known for its velvety texture, mild spice level, and melt-in-your-mouth tenderness.
What Makes Malai Pasanday Special?
Unlike traditional Beef Pasanday, which are often cooked in a spiced tomato or onion gravy, Malai Pasanday are marinated in a mixture of yogurt, cream (malai), nuts, and aromatic spices, giving them a silky texture and a mild, buttery flavor.

Ingredients:
-Pasanday /Parchay beef tenderloin strips 1 kg
-Salt 1 tsp or to taste
-Raw papaya) paste 1 & ½ tbs
-Ginger garlic paste 1 & ½ tbs
-Cooking oil ½ Cup
-Onion sliced 4 medium
-Poppy seeds washed & dried 1 & ½ tbs
-Water ¼ Cup or as required
-Yogurt ¾ Cup
-Coriander powder 1 tbs
-Red chilli powder ½ tsp
-Cumin powder 1 & ½ tsp
-Turmeric powder ¼ tsp
-Red chilli powder 1 tbs or to taste
-Garam masala powder ½ tsp
-Cream ¾ Cup (room temperature)
-Charcoal for smoke
-Fresh coriander chopped
-Green chilli sliced
Directions:
-In a bowl,add beef pasanday, salt,raw papaya paste,ginger garlic paste & mix well,cover with cling wrap & marinate for 30 minutes.
-In a wok,add cooking oil,onion & fry on medium flame until golden,set aside & reserve oil for later use.
-In a grinder,add poppy seeds,fried onion,water & grind well to make a paste.
-In a bowl,add ground paste,yogurt,coriander powder,cumin powder,turmeric powder,red chilli powder,garam masala powder & whisk well.
-In marinated beef pasanday,add prepared marination & mix well,cover with cling wrap & marinate for 1 hour.
-In the same wok,add marinated beef,mix well & cook on medium flame for 2-3 minutes,cover & cook on low flame for 30 minutes (Stir & check in between).
-Turn off the flame,add cream,turn on the flame & mix well,cover & cook on low flame for 8-10 minutes.
-Give coal smoke for 2 minutes.
-Garnish with fresh coriander,green chilli & serve with naan!
